Ingredients:
- 1 cup 1% small curd cottage cheese (226g)
- 9 large eggs (450g)
- 1 cup raw baby spinach (30g)
- 1/3 cup ‘Athenos” crumbled feta cheese (37g)
- 1/3 cup shredded cheddar cheese (37g)
- 1 medium (114g) bell pepper (any color, diced)
- 3 (45g) green onions (chopped)
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions:
- Preheat your oven to 400 degrees F. Spray a 9-inch pie dish with olive oil and set aside.
- Whisk the eggs in a large mixing bowl. Add all the remaining ingredients and mix to combine.
- Pour the egg mixture into prepared pie dish.
- Bake for 45 minutes or until the eggs are set and the center is no longer jiggly. Allow to cool for 15 minutes. Slice into 8 slices and enjoy!
