Ingredients:
- 1 cup low fat cottage cheese (226g)
- 2 tablespoons honey (42g)
- 1 cup (125g) all-purpose flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 3 large (150g) eggs
- 1 teaspoon vanilla extract
Instructions:
- In a small blender or food processor, add the cottage cheese and honey and blend until smooth and creamy. Set aside.
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- Add the eggs, blended honey and cottage cheese, and vanilla extract. Whisk until just combined.
- Preheat a large griddle/skillet over medium heat.
- Form 4 large, thick hot cakes. Cook for about 3 minutes on each side, or until golden and cooked through. Top with maple syrup and enjoy! Macros for syrup not included.
Notes:
- For an even healthier and gluten-free swap, you can use a food processor to blend rolled oats into a fine flour and swap this for the all-purpose flour.
