Rise and shine with these delicious cottage cheese hot cakes. Packed with protein and low in calories, they’ll put your day off to a great start.

Makes: 4 hot cakes

Serving Size: 1 hot cake (117g)

Prep Time: 15 minutes

Total Time: 30 minutes

Nutrition Facts:  245 calories / 35.5g carbs / 14.5g protein / 5g fat

Cottage Cheese Hot Cakes

Ingredients:

  • 1 cup low fat cottage cheese (226g)
  • 2 tablespoons honey (42g)
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3 large (150g) eggs 
  • 1 teaspoon vanilla extract

Instructions:

  1. In a small blender or food processor, add the cottage cheese and honey and blend until smooth and creamy. Set aside.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. Add the eggs, blended honey and cottage cheese, and vanilla extract. Whisk until just combined.
  4. Preheat a large griddle/skillet over medium heat.
  5. Form 4 large, thick hot cakes. Cook for about 3 minutes on each side, or until golden and cooked through. Top with maple syrup and enjoy! Macros for syrup not included.

Notes:

  1. For an even healthier and gluten-free swap, you can use a food processor to blend rolled oats into a fine flour and swap this for the all-purpose flour.
