Ingredients:
- 1 medium (49g) “Mission” flour tortilla
- ⅔ cup (151g) egg whites
- ¼ cup (70g) chopped veggies
Instructions:
- In a small skillet with a small amount of cooking spray, saute the veggies until tender. Season with salt, pepper, or herb mix of your choice.
- Pour in the egg whites and place the tortilla on top.
- Cook about 3-5 minutes until egg whites are completely cooked through.
- Remove the omelet from the pan and roll up.
- Enjoy immediately or store in airtight containers for meal prep.
