Ingredients:
- 1 lb (448g) shaved Brussels sprouts
- 8-ounces (224g) diced ham
- ¼ cup (28g) grated Parmesan cheese
- 2 medium (364g) Honeycrisp apple (chopped)
- ¼ cup (56g) apple cider vinegar
- 1 medium (42g) shallot (minced)
- 2 tablespoons olive oil
- 2 tablespoon Dijon mustard
- 1 tablespoon (20g) fig jam
- 1 teaspoon orange zest
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions:
- In a large bowl, combine Brussels sprouts, ham, Parmesan, and apple.
- To make the dressing, combine the remaining ingredients and whisk well. Pour over the salad and toss to coat evenly.
Notes:
- This salad can be served warm or chilled! For a warm version, saute the diced shallots in a skillet over medium high. Then add the remaining dressing ingredients. Add the Brussels sprouts to the skillet and cook for an additional 3-5 minutes until slightly tender. Transfer back to a mixing bowl and toss in remaining salad ingredients.
