How did carbs earn a bad rap?
The low-carb philosophy first came about in the 1970’s thanks to Dr. Robert Atkins, who would be the face of the popularized Atkins diet in the years to come. He claimed that diets low in carbohydrates were the key to weight loss, and this trend really took hold in the early 2000’s. Thanks to the digital age and the way information became easier to share, that idea spread like wildfire. Foods we grew up on, such as bread and pasta, were suddenly labeled as “bad”.
Then along came keto, a diet that requires eating less than 20g of net carbs per day and significantly upping your fat intake so your body can run on ketones (liver-produced molecules originating from fat). Foods we once thought were “bad”, such as bacon, butter, and red meat, were suddenly now encouraged on a “diet”!
How do we know what’s right and what’s wrong?
That’s a good question! The truth is, there’s not really a right or wrong. It’s really up to you how you want to live your best life, in a body you are happy with, while still enjoying foods you love to eat!
There is definitely truth behind the science of keto, and it’s pretty common to see rapid weight loss when you first start. But diets that eliminate large food groups are hard to sustain, and eventually your weight loss will slow down a bit. If you eat carbs again, your weight will spike back up. So it’s important to ask yourself, “Can I realistically maintain a low-carb diet for the rest of my life?”
How carbs are part of a healthy diet

Part of the reason why carbs are easily misunderstood is because lots of processed foods tend to be high in carbs too, such as cookies, cake, chips, and fast food. But remember that there are healthy carbs too! Fruits, vegetables, legumes, whole grains, and oats are all sources of carbs, but pack a ton of nutrients and fiber with every serving.
